  Perak's poached chicken featured juicy flesh and delicate slippery skin, two features also common to the Hainan chicken, but the Ipoh chicken was packed with much more flavor, like it was infused with hints of coconut, sesame, and almond. You might not need to rely on the accompanying dipping condiments for the bean sprout chicken, which are often necessary while eating Hainan chicken. Perak's version was garnished with bits of crunchy fried garlic over a pile of blanched peppery bean sprouts. It's also more versatile, since it could be served with fragrant rice or a soupy sar hor fun.
  
  The lunch specials at Perak included a choice of beverage, so I tried the white coffee that originates from Ipoh. It tasted much like the coffee variations from SE Asia - dark roasted coffee mixed with sweetened milk, possibly blended with a small amount of hazelnut based on it aroma of the drink. The sweetness level was relatively mild, closer to a HK-style milk tea than a Vietnamese coffee.
